摘 要:本論文以磷脂、雙氧水、乳酸為主要原料對(duì)大豆磷脂進(jìn)行羥基化反應(yīng),用正交實(shí)驗(yàn)方法對(duì)羥基化條件進(jìn)行優(yōu)選,用標(biāo)準(zhǔn)方法測(cè)試產(chǎn)品的各種性能,包括了碘值、過氧化值、酸價(jià)、水分,從而得到了最佳反應(yīng)條件,同時(shí)也得出了磷脂碘價(jià)、過氧化值、酸價(jià)與改性磷脂親水性能的關(guān)系。改性后的濃縮磷脂碘價(jià)降低, 親水性能明顯提高,拓寬了磷脂的應(yīng)用范圍,更好地滿足工業(yè)上的需要。羥化反應(yīng)各因素對(duì)碘價(jià)、酸值、過氧化值等品質(zhì)都有影響,因此可以通過控制生產(chǎn)條件得到親水親油性能不同的改性磷脂產(chǎn)品。

Abstract: This article to phospholipids、hydrogen peroxide、lactic acid as the main raw materials of soybean lecithin for hydroxy-reaction By orthogonal experimental methods of optimizing the conditions of hydroxyl With the standard method of testing a variety of products,including the iodine value、 the peroxide value、the price of acid、water,which has the best conditions,but also that the price of phospholipid iodine、peroxide value、price and the acid modified phospholipid hydrophilic properties of relations. Lecithin modified after the lower price of iodine,hydrophilic performance markedly improved,widened the scope of application of lecithin, to better meet the needs of industry. Hydroxylation various factors on the price of iodine, acid,peroxide value,and so affect both the quality and therefore can control the production conditions of different hydrophilic oil-modified lecithin products.
